Local, fresh, organic

Whenever food and drink critics talk about the importance of supporting “local food”, it raises a smile among Aqua Eight’s team of Chinese chefs.

The “shop local” concept may be relatively new over here in the UK, but in Chinese cuisine it has been going strong for centuries. In China, the success of any dish is connected with the freshness of the ingredients, so if you watch Chinese people food shopping, you’ll see us picking up, smelling and very closely examining everything before deciding whether or not to accept it.

Aqua Eight guarantees the freshness of key ingredients because we work with East of England farmers and suppliers, including Suffolk fishermen who supply our wet fish daily. Our Executive Chef has always cooked with local organic meat; our customers expect no corners to be cut and want to enjoy the best quality.

Of course rice and noodles still need to be imported (sadly, still no paddy fields in Suffolk!), plus specialist Asian spices and condiments. Selected exotic fruits and vegetables are also imported if they are necessary for the authenticity of certain Pan Asian dishes.

But seasonal food ingredients are important to us too. Our customers want variety and choice each time they visit; they don’t like restrictive menus of just half a dozen starters and main courses. So our seasonally-changing menu items are carefully selected. They retain all the most popular dishes whilst introducing some fresh flavours.

Aqua Eight’s front of house team is trained by the Executive Chef and our wine merchant, to understand all the food ingredients, wine flavours and the characteristics of main grape varieties. It means that if you are ever unsure what to order, you can ask your server to make a recommendation or to explain what’s in each dish.

Vegetarian and gluten free diners are also well catered for, with special menus instead of just one or two special dishes. If your children are with you, our “Small Eats” tapas-style menu is ideal for young people or anyone with a smaller appetite.
